Vinification
From the oldest vineyard, with a yield of 3,000 kg/ha, grapes in an advanced state of ripeness were selected and fermented using the traditional method of treading in a wine press, at a controlled temperature.
Aging
Aged for 24 months in used French oak barrels and for 6 months in bottles in the cellar.
